I would eat healthier ALL the time if I could always catch Mary in the right mood.

I bought these ingredients with good intentions (spinach, cucumbers, tomatoes, feta cheese) because I was craving a nutritious salad; she willingly washed, chopped, tossed, served and packaged!




AND, she whisked me together a low-calorie Greek vinaigrette with:

yellow mustard

apple cider vinegar
plain yogurt
honey
olive oil
onion
garlic
salt
pepper

Last night I added chicken; today, I'll enjoy just the veggies.
This handy little individual salad container that keeps the dressing separate until just the right time guarantees that I'll reach for this instead of something junky or fattening, or even a Lean Cuisine:



So, YUMMY! I can't wait for lunch!

What a great container! And the salad looks absolutely wonderful. I would eat salads more if they were GOOD - like restaurant salads (or like yours). Plain old iceberg lettuce, carrot shreds and dressing is just not exciting. Good job to Mary for making such a yummy one!!
